Uncle Chris’s Homemade Baked Beans

Baked beans out of a can can be pretty good.  But nothing beats making them from scratch.  Here is Uncle Chris’s recipe that he is willing to share with y’all:

3 cups dried white beans rehydrated (follow the instructions on the package)*
1 1/2 cups ketchup
1 1/2 cups water
1/3 cup molasses or sorghum syrup
1 TBSP dry mustard
1 TBSP coarse salt
6-8 slices smoked bacon (cut into small pieces)
1 1/4 cups brown sugar
2 TBSP Pure maple syrup
1/4 c honey

After you have rehydrated the beans, strain them and rinse them. Then mix all ingredients together in a crock pot, adding beans last, and cook on low for 9-12 hours.

*If you prefer beans that are slightly softer in texture buy 3-4 cans of white beans, strain them and rinse them and the continue with the recipe. More beans may be added if you like.
