Roasted Red Pepper Hummus – #TuesdayFoodsday

Are you looking for a side that will please the taste buds as well as keep you on a budget?  Our roasted red pepper hummus not only is delicious it also is very affordable (and makes a ton!).  Here is our recipe:

Roasted Red Pepper Hummus

2-3 Red Bell Peppers (depending on size)
1-3 cloves of garlic (to your taste preference)
1 can garbanzo beans/chick peas
6-8 oz feta
olive oil
salt to taste
black pepper to taste

To roast red peppers: put them on grill on high (if using gas) or directly on coals (if using charcoal). Let the side blacked, rotate until all sides are black. Put into chilled glass bowl, cover bowl and chill 5-10 minutes. Remove skin, stems and seeds from pepper and cut into chunks. In a food processor blend garbanzos and olive oil. Add red pepper, blend until slightly smooth. Add cheese and blend. Add salt and pepper while blending. Put into serving bowl and serve with chips or pita.
