TNBS Classics: Bar None’s Meatloaf – #TuesdayFoodsday

Meatloaf. Not the singer, the food. It is easy and versatile. Here is our base recipe:

Bar None’s Meatloaf

1.5 pounds ground beef, buffalo, elk (any red meat really)
1/3-1/2 cup ketchup
2-3 TBSP mustard (be creative, it doesn’t have to be yellow mustard)
1/4 cup red wine
1/2-2/3 cup oatmeal
1 egg
1 onion (finely diced)
1-4 peppers (depending on size, 1 bell pepper is fine, 4 jalapeños gives a nice kick) chopped finely
Salt, pepper, and other herbs and spices to taste preference.

Preheat oven to 375. Blend ingredients by hand in a bowl. Press into bread pan or casserole dish. Bake until medium brown (40-45 minutes).
