Granola is a great food. It has the versatility of being a work snack, breakfast, or something simple you can bring on a camping or hiking trip. The following is a recipe I acquired a while ago for cinnamon granola. Give it a shot and let us know what you think!

Cinnamon Granola
4 Cups old-fashioned oats
1 Cup shredded coconut
1/2 Cup sliced almonds
1/2 Cup packed brown sugar
1/4 Cup canola oil
1/4 Cup honey
1 tsp ground cinnamon
1 tsp vanilla extract
1 Cup raisins or other dried berries

Mix together:
Old-fashioned oats, shredded coconut, and sliced almonds.
Place in un-greased 9×13 baking pan

Mix together:
Packed brown sugar, canola oil, honey, and ground cinnamon.
Microwave on high for 1 minute.
Add vanilla extract.

Pour over dry ingredients in pan. Bake at 350 degrees for 20-30 minutes. Stirring several times as it heats up. Cool 10 minutes. Add raisins or dried berries. Store in airtight container.
