As a kid I always had a thing for Egg McMuffins.  McDonald’s was a rarity in my childhood so it was fun to eat one.  I’m not going to lie, I still love a good egg breakfast sandwich but I’ve grown up and make it myself.  You can make these yourself as well and the best part is that you can make it to order.

All you need are english muffins (depending on how healthy I am feeling I go with either sourdough or multigrain), eggs, and whatever else you want on it.  I like to go with bacon or ham, depending upon what I have.  I also enjoy a nice turkey with avocado.  I bought a Nordic Ware 2 Egg Microwavable Poacher when I was in grad school and it has been amazing!  Put just a little water in each cup and then an egg (as is or scrambled) and microwave it for 30-90 seconds (depending upon your microwave).  If you like you can use a real egg poacher and take your time.

You can turn it into a family activity by having a breakfast bar and people can top their egg sandwich with whatever they like.  The plain folks can have egg, cheese and meat while the exotic folks go with sun-dried tomatoes, avocados, turkey, egg and some fancy cheese.  Have fun with it!
